Planetary Health Diet Menu - Autumn 2024
On 23 September 2024, the WMFC Association Dinner brought together a vibrant mix of experts from academia, industry, and beyond. More than just a social evening, the event marked a major step toward the formal launch of the WMFC Association—built on shared visions for collaboration and sustainable food systems.
Curated by Gabriella from Giethoorn Hospitality, the menu featured eight imaginative courses celebrating both nutrition and creativity. Guests enjoyed dishes like the vibrant Tomato Blush, earthy Fungi Earth, the comforting Life is Gourd stew, and the melt-in-your-mouth Fennel Melt; each crafted to nourish the body and delight the senses.
To elevate the meal, a thoughtful selection of infused waters accompanied each course:
Cold-Infused Lemon & Fennel Seed offered a crisp, citrusy start
Cold-Infused Thyme & Rosemary brought fragrant, herbal depth
Hot-Infused Cinnamon & Orange introduced warmth and spice
And for dessert: Sparkling Infused Elderberry Water, a gently sweet and effervescent finish
A special Dutch cultural section wrapped up the evening, featuring a cheese platter and locally sourced drinks, offering a final toast to shared values, regional flavour, and a future of innovative food practices.
